What would pumpkin season be without the pie?
· 2 cups of pumpkin
· 1/2 egg substitute
· ½ cup brown sugar
· 1 tablespoon pumpkin pie spice
· 12 oz evaporated milk
· 1 9 in pie crust
There are three ways to prepare pumpkin for use at home:
· Baking Method:
o Cut the pumpkin in ½ & discard stem & stringy insides
o Save the seeds! Allow them to dry & roast them for an autumn snack!
o Place the 2 halves in a shallow baking pan face down & cover with foil
o Bake at 375° for about 1 & ½ hrs (for medium sized pumpkins)
o After allowing the pumpkin to cool – scoop out the flesh & mash with potato masher or potato ricer. If you have a food processor, it may be easier to puree the pumpkin contents
· Boiling Method:
o Cut pumpkin in half & discard stem & stringy insides
o Peel & cut pumpkin into chunks
o Place 2 halves into a saucepan & cover with water
o Bring to a boil & cook until chunks are tender
o After allowing the chunks to cool –mash with potato masher or potato ricer or puree in a food processor.
· Microwave Method:
o Cut pumpkin in half & discard stem & stringy insides
o Microwave on high for 7 minutes/lb
Preheat oven to 350°. Mix pumpkin, egg substitute, brown sugar, pumpkin pie mix, & evaporated milk together in a bowl. Pour mixture into the pie curst. Bake for an hour or until a knife stuck in the middle comes out clean.
