Eyeball Eggs (makes 12 half eggs)
It’s your traditional deviled egg, gone spooky. Here’s what you need:
· 6 hard-boiled eggs
· 2 tablespoons mayo
· 1 & 1/2 teaspoons Dijon mustard
· 1 green onion
· Leaves of parsley – just a few fresh ones
· Ground black pepper
· Salt
· Paprika
· Green or black olives
Slice the green onion very thinly (keeping the green separate from the white). You may also finely chop the parsley if so desired. Halve the hard boiled eggs & scoop out the yolks. After mashing the yolks well, add mayo & Dijon until you reach desired consistency. Stir in the white part of the sliced green onion & a majority of the parsley. Add pepper, salt, & paprika to taste. Fill the halved egg white using a teaspoon. Add a touch of Halloween by topping each with a slice of green or black olive to keep an “eye” on your party guests!
