- About 3 or 4 cups of pumpkin seeds / Or seeds from a medium size pumpkin
- 1/2 cup butter (1 stick)
- 1 tsp Garlic salt (Or salt if you don't like the garlic)
Harvest the pumpkin seeds before you carve your jack-o-lantern.
You can wash off the seeds or leave some of the pulp on them if you wish. Pat dry with paper towel.
Place seeds in a shallow baking dish and spread seeds out so they are only 1 layer deep.
Melt butter and pour over pumpkin seeds and toss.
Sprinkle garlic salt over seeds and bake in a 350 degree oven until golden to medium brown stirring occasionally.
(You can turn the broiler on after about 20 minutes to brown them if they are not turning, but watch them closely and stir then often or they will burn!)
Place in a festive pumpkin dish and serve warm or cold.
